Upgrading SCCM Servers to Windows 2008 R2

I currently have 1 Central Site and 15 primary sites running Windows 2003 SP2 and SCCM SP1 R2.

 

I am preparing for a windows 7 upgrade and feel it would be best to upgrade all site servers to 2008R2 a the same time, to utilise MDT 2010 and gain full funtionality.

 

Has anyone done this and any advice on steps and things to look out would be greatly appreciated.
