I can't help but wonder whether its a timing issue of when the script is deployed by Intune; I've since tried rebuilding a device 8 times and I've managed to get the scheduled task deployed and ran as the user I'm logging in with once - the other 7 times resulted in the scheduled task been ran as 'defaultuser0'. The one time it worked I noticed that the script along with all my other scripts got deployed along the same time after logging in with my user account, whereas the other 7 times it didnt work, as soon as I logged in, the scheduled Task was already created using the user account, 'defaultuser0'.
